Healthy Blueberry-Banana Oatmeal Morning Muffins

These muffins make the perfect on-the-go breakfast or snack. Most store-bought muffins are full of sugar whereas these contain a small amount of added sugar. These muffins are made with whole wheat flour and rolled oats, which contain fiber and help to keep your blood sugar balanced throughout the morning, keeping you full and satisfied until lunch. For maximum satiety (and deliciousness!), spread your muffin with a tablespoon of almond butter!

Health Blueberry-Banana Oatmeal Morning Muffins
Makes 12 Muffins


Ingredients
2 cups whole wheat flour
1/4 cup old-fashioned oats (plus more for sprinkling on top)
1 tsp baking soda
1/2 tsp cinnamon
1/2 tsp salt
2-3 ripe bananas, mashed
2 eggs
1/2 cup honey
1/3 cup olive oil
1/4 cup light canned coconut milk
1 tsp vanilla extract

Directions
1. Preheat oven to 350 degrees and lightly grease muffin tin with cooking spray or line with muffin liners.
2. In a large bowl, combine dry ingredients (whole wheat flour, oats, baking soda, cinnamon, and salt). Mix until well combined.
3. In a separate bowl, combine wet ingredients (bananas, eggs, honey, olive oil, coconut milk and vanilla extract). Beat until well combined.
4. Add the dry ingredients to the wet ingredients and mix until combined but don’t over-mix! Mix in one cup blueberries.
5. Pour mixture evenly into muffin tan. Sprinkle tops with rolled oats. Bake for 20-25 minutes, until a toothpick inserted in the center of the muffin comes out clean. Enjoy!
