Air Fryer Chicken Parmesan

Air fryers use the power of hot circulating air to make crispy “fried” food without all of the oil that has to be used when frying food in a traditional way. We just purchased our air fryer and this Chicken Parm was our first experiment and it turned out so well, I had to share the recipe. We will definitely be making this again soon!

Ingredients

  • 1.5 lb chicken breasts, cut in half widthwise to make thin breasts or pounded thin into 1/2-1 inch thick pieces with a meat tenderizer

  • 1/2 cup whole wheat flour (or almond flour if gluten-free)

  • 3/4 cup whole wheat breadcrumbs

  • 1/2 tsp oregano

  • 1/2 tsp garlic powder

  • 1/4 tsp cayenne pepper

  • 1 tsp salt

  • 1/2 tsp pepper

  • 2 eggs

  • 2 cups marinara sauce

  • 2 oz mozarella cheese, sliced into rounds

  • 1/4 cup grated parmesan cheese

  • Basil for garnishing

Instructions

  1. Preheat air fryer to 375 degrees.

  2. In a medium bowl, whisk together the breadcrumbs with the oregano and cayenne peper. In another small bowl, whisk the eggs, In a third small bowl, add the flour and season with salt and pepper.

  3. Coat the chicken in flour, then egg and then breadcrumbs. Coat it back in the egg wash and then the breadcrumbs once more.

  4. Spray the bottom of your air fryer basket with a little oil. Put the chicken breasts in the air fryer basket for 15 minutes, flipping them after 10 minutes. *Depending on the size of your air fryer you may have to cook the chicken in batches so that they aren’t overcrowded.

  5. Once chicken is cooked, find a shallow dish and add the chiccken. Top the chicken with the marinara and freshly sliced mozzarella and parmesan. Broil in the oven until the cheese is bubbly! Top with basil and serve with an arugula salad.
